BEAT YOUR MEAT


How do we escape the stress of our endless home renovation projects? We kick back, pour a drink and beat our meat! Joe is excellent at pounding his chicken into a tasty, mouth watering meal anyone (including me) can make. It's quick, simple, healthy and incredibly delicious. If your kids are back to school and you don't have time to make a huge meal, just relax and pound your stress away!
THE CHICKEN AND THE EGG:
What you'll need:
3 Eggs
Salt
1/2 Cup all purpose flour
3 1/2 cups bread crumbs (we use a brand on the east coast called 4C)
1 Cup vegetable oil
8 chicken cutlets
If you don't get thin cut chicken cutlets, use a meat cleaver (this might frighten your neighbors because it sounds a little like living next door to OJ Simpson) and pound your chicken until it is about as thin as a fluffy pancake (1/2"-1")
Use three separate containers (we rectangle glad tupperware containers). Fill one with the eggs and salt whipped together. Fill the next with flour and salt and the third with breadcrumbs seasoned with salt (we use our favorite Mixed up Salt). Then go down the assembly line with each piece of chicken dipping in egg combination, flour and finally bread crumbs. Meanwhile, heat oil in skillet on stove over medium heat. Use tongs to drop chicken in one at a time cooking until golden brown on one side (about 4 minutes), flipping with tongs for another 2-3 minutes.
