YOU SAY POTATO, I SAY TOMATO
While we enjoy an extended holiday weekend, I thought I'd share two of our favorite twists on simple veggies; small Yukon potatoes and cherry tomatoes.
1.) for Joes' famous SMASHED POTATOES here's what we do: Take a bag of small yellow Yukon potatoes and spread them onto a cookie sheet. Add olive oil, salt and pepper and place in an oven at 350 degrees for 45 minutes. Ten minutes prior to finishing, bring potatoes out and lightly "smash" them with potato masher (don't go crazy, just push them down) and place back in oven for remaining time. Smashing the potatoes before completing pushes the taste out and makes them MMM MMM delicious!
2.) TOMATOH: Once again Joe has created a simple twist on this incredibly simple vegetable. Joe places cherry tomatoes in a bowl with olive oil, salt, pepper and minced garlic. He then places those directly on the grill until slightly cooked/browned then places back in the bowl with the olive oil/garlic mixture and lets rest on the counter covered until we eat. This is a delicious partner to a steak, salad, etc.
