SOMETIMES YOU FEEL LIKE A (WARM) NUT
I'm definitely feeling like a nut today A.) because it was an unusually hectic weekend and B.) I believe I've already posted this yummy recipe, but it's Monday so it's okay to act a little nuts, right? Speaking of, last time I was in the land of fruits and nuts (California...and I'm allowed to say that because I'm both from there and fall under both categories!) I stumbled upon this delicious snack in my mothers kitchen. She picked it up from one of our favorite food nuts, Ina Garten, so I have decided to make it this weekend for a gaggle of nuts gathering for a graduation party (humm, how many times can I mention "nuts" in one blog entry?). Now, don't make yourself nuts when you see the list of ingredients because even a....you guessed it...NUT could manage this simple recipe!
HERE'S WHAT NUT TO DO:
1 1/4 pound unsalted cashew nuts
2 tablespoons coarsely chopped rosemary
1/2 teaspoon cayenne
2 teaspoons dark brown sugar
2 teaspoons kosher salt
1 tablespoon melted butter
Preheat oven to 375.
Place nuts on ungreased baking sheet and bake for 10 minutes until warmed through.
Meanwhile, combine rosemary, pepper, sugar, salt and butter in large bowl. Toss the warm nuts with the rosemary mixture until the nuts are completely covered. Serve warm and enjoy acting like a total nut..at least for a day!
