A CHIP OFF THE OLD BLOCK
Last weekend we spent Easter Sunday with Joe's parents. I've always found it interesting to watch friends with their parents and/or siblings, because it is an interesting snapshot into how they became who they are today. Take Joe's dad, for example. At first glance you can certainly tell that they are related, but beyond the physical similarities one might think they have nothing else in common until you talk to Joe Sr. He loves cars. He obsesses about his tools and the organization of them. Initially one might think he's quiet and reserved, but start talking and the man has a lot to say! So, while Joe and Joe were talking cars and other tool-like stuff, I was in the kitchen with Peggy, Joe's step mom. As part of the ten dishes she prepared for Easter dinner, she featured one that had been on Joe's list of favorites for years. Broccoli casserole. Apparently Peggy used to make this dish when she and her parents would take Joe camping in upstate New York when he was a kid. It's simple to make, delicious and lasts long enough to enjoy for days. Her secret recipe?? Potato chips on top!! After the Joe's gobbled up this dish, we came home and made it the next day. WHAT YOU'LL NEED:
2 ten ounce packages of frozen chopped broccoli, cooked and strained
1 cup mayonnaise
1 cup grated sharp cheddar
1 (10 3/4 ounce) can condensed cream of mushroom soup
2 eggs lightly beaten
2 cups crushed potato chips (or crackers)
2 tablespoons melted butter
WHAT YOU NEED TO DO:
Preheat oven to 350. Spray a 13x9 inch baking dish with vegetable oil cooking spray. In a large mixing bowl combine broccoli, mayonnaise, cheese, soup and eggs. Mix well with metal spoon. Place the mixture in the prepared baking dish. Top with crushed chips and pour the melted butter evenly over the crackers. Bake for 35 minutes or until set and browned.
