HEAVY ON TASTE LIGHT ON YOUR WAIST


The last month on the east coast has seen a major snow storm at least once a week which, if you had grand plans for a big 2011 weight loss complete with new diet (like me), means you've put those plans off until the ice melts. So, sadly, to keep warm I've stayed inside by the fire, stuffed my face with yummy things and watched my belly grow in front of an unforgiving mirror. With yet another Saturday with temperatures below freezing we stayed indoors and watched the Food Network, where we found this delicious, inexpensive, incredibly easy recipe for a salad like no other. Cold Asparagus, red onion and peccorino cheese..what's not to like? So, bundle up, hunker down and dream of warm days and thin waist lines as you chomp away on this wonderful, cold, winter salad.
Here's what you'll need:
1.) Two bunches of asparagus, uncooked.
2.) half of a red onion finely chopped
3.) 1 cup of grated Peccorino cheese
4.) Salt and Pepper
5.) Red Wine vinegar and olive oil
Chop the asparagus into small pieces and throw in a bowl. Add finely minced red onion, 1 cup of grated cheese, salt and pepper and red wine vinegar with a tad of olive oil. If your kitchen is as cold as ours, leave it out and let stand for thirty minutes. If you live in a warmer climate, place in the refrigerator for the same amount of time. Then, enjoy!
