GOOD CARB
There are good carbs, bad carbs then there are delicious carbs like Joe's Fettuccine Carbonara. After diving into a plate of this dish I typically dive into a shame spiral, then pick myself up, eat a little more and run around the block. So, stop counting carbs and serve up a delicious meal you can count on!
COUNT THIS CARB!
This truly is one of the easiest meals to prepare..I say this, of course, while watching Joe prepare it with a martini in my hand but I'm sure, if tested, I could make this one happen too! While many use spaghetti, we use a package of Fettuccine, the rest is really, really easy!
1 package Bacon
1 medium onion, finely chopped
1/4 cup white wine
1 package fettuccine or spaghetti (1 pound)
3 large eggs
3/4 cup finely grated Parmigiano-Reggiano
1/4 teaspoon salt
1 teaspoon coarsely ground black pepper
Cook bacon in deep, heavy skillet (we love the lodge skillet from wal-mart) over medium heat, stirring, 1 to 2 minutes. Add onion and cook, stirring, until golden brown, about ten minutes. Add wine and boil until reduced by about half.
Meanwhile, cook pasta in a 6-8 quart pot of boiling, salted water.
Whisk together eggs, cheese, salt and pepper in small bowl.
Drain pasta, add to onion mixture and toss over moderate heat until coated. Remove from heat and add egg mixture tossing to combine (if you don't remove from heat you'll scramble the eggs!!).
