THE MEAT PACKING DISTRICT

Every day I learn something new about New York and its colorful, lively neighborhoods. From packing meat (in the 1900's it was home to 250 slaughterhouses) to selling it (in the 90's it was known for prostitution), the Meatpacking District has come a long way, named "most fashionable neighborhood" by New York Magazine in 2004. A neighborhood once packed with transsexual hookers has been transformed by hip shops like Diane von Furstenberg and Stella McCartney. In our neighborhood, Joe has transformed the everyday hamburger into a culinary treat!
POUND YOUR MEAT:
We LOVE Joe's version of Ina Garten's Blue Cheese Burgers. He packs them with delicious, mouth-watering treats, transforming dull burgers into tasty, wonderful meals.
3 pounds ground sirloin
3 tablespoons steak sauce
6 extra large egg yolks
1 1/2 teaspoon kosher salt
3/4 teaspoon ground black pepper
chopped onion
bread crumbs
To strengthen the meat, Joe adds bread crumbs as he pounds (in a large bowl) the steak sauce, egg yolks, salt, pepper and onion. Shape into individual burgers. Fire up the grill, place on direct heat for 4 minutes on each side for medium-rare. Place slice of blue cheese on top of each burger, serve. YUM!
