GET A LITTLE SMASHED THIS WEEKEND
HERE'S WHAT WE DO: heat oven to 350. Scatter small red or yukon gold potatoes on a cookie sheet and sprinkle with olive oil, salt and pepper. Place in oven for 45 minutes and set timer for 35 minutes. Ten minutes before they are finished, take them out of the oven and SMASH them (idea here is just to flatten them NOT MASH them) then place back in oven for remaining ten minutes.
WHAT YOU GET: the final ten minutes of cooking the potatoes smashed will help absorb the salt, pepper and olive oil and makes them yummy little supporting actors to any star meal. We typically balance out the carb with a roasted veggie, like carrots or broccoli.
