TAKE IT TO THE STREETS

As the summer begins it's downward spiral towards fall and the kiddos prepare to go back to....eeek...SCHOOL, trying to come up with something exciting for dinner can be tedious.  After all, two months of hot dogs and burgers just won't cut it anymore, ENTER my summertime favorite, Mexican Street Corn.  While the end result often looks like someone dropped a plate of corn on the floor, the taste is out of this world!  Follow these simple steps to make your kids smile this weekend...and create lasting, delicious memories of summer for years to come!
THE BEAT OF A DIFFERENT DRUMMER:
I just love this recipe for corn in the summer.  We love to cook our corn on the grill...boiling it is too old school (and ruins the taste) so follow these simple steps and you'll never go back to that nasty pot again:
Before cooking corn prepare the rub:
Half cup of mayonnaise (Best Foods or Hellmanns)
Pinch of Cayenne Pepper
Chili powder to taste
One or two cloves of garlic (depending on how much you love garlic)
Farmers Cheese or queso fresco (to taste)
So, after preparing the above rub, brush corn with olive oil and place directly on grill for 8-10 minutes, then place a bit of the corn rub on each piece and put back on grill for another minute.  Take off grill and enjoy..we like to have a bowl of the rub on the table and add more as we eat.  YUM YUM!
