SNOW BALLS


Our front yard looks like a coffee table at an elite Hollywood Party...nothing but piles and piles of white stuff! While it doesn't go UP our nose, it's UP TO OUR noses in some areas thanks to snow drifts, so as Joe plans a move back west to a warmer climate, I suggest we head into the kitchen, fire up the stove and make something yummy. Usually..well, always, this means Joe opens one of his cookbooks, I light a fire and make us cocktails while Joe warms up over a hot stove. The favorite comfort food in our home lately is an Italian favorite, MEAT BALLS, and ohhhh has Joe perfected this recipe! While we usually toss these in a big bowl of delicious sauce, they're just as good all alone. If it's so cold outside you want to roll up into a ball, grab a few ingredients and make meatballs!
JUST ROLL WITH IT:
They really are incredibly easy to make. So, to get started, hit the grocery store and pick up a few key ingredients:
1.) 2 cups of bread crumbs
2.) 1/2 cup of milk
3.) 6 cloves of garlic
4.) One bunch of fresh parsley
5.) 1-2 cups of grated Parmesan
6.) One pound Ground Beef
7.) One pound Ground Pork
8.) 4 Eggs slightly beaten (but not abused)
9.) Salt and pepper
Mix the breadcrumbs and milk in a bowl to form a paste. In a food processor, grind the garlic, cheese and parsley. Add contents of food processor to bowl with bread crumbs. Add beef, pork, salt and pepper and mix. Gently form meatballs. If making with sauce, drop meatballs in simmering sauce and cook for an hour then serve over spaghetti or linguini. Tonight, we placed them on a baking sheet at 350 and cooked until tender and delicious (approximately thirty minutes)
