GET PICKLED


We had guests over last weekend and, well, we got pickled the second they walked in the front door! It had been a typical day for us at the junction of dysfunction, so we were looking forward to getting loose with a tight-knit group of friends. How did we get looped? We had a little bit of southern comfort..pickled okra, and ohhh lala was it ever yummy! While I don't normally order Okra on the menu, this little treat made me want more-kra, more-kra, more-kra!!!
GRAB A PINT (or 8)!
Well, maybe not in one sitting, but you're guaranteed to love these after the first bite! They're quick, easy and delicious! This recipe makes 8 pints.
Ingredients:
2 pounds okra
1 qt white vinegar
6 tablespoons salt
16 garlic cloves
1 bunch dill
1/2 cup yellow mustard seeds
clean jars
Clean Okra. Bring vinegar, 3 cups water and salt to a boil in a large pot. Evenly divide dry contents in each jar, leaving room at the top for liquid (approx. 1/3). Pour liquid on top of each stuffed jar, attach lid and place in refrigerator. After approximately three days, enjoy!
