YOU SAY TOMATO, I SAY SUN DRIED TOMATO

This St. Patricks day make your friends feel GREEN with envy by whipping up this simple, delicious dip by one of my favorite Barefoot Contessa's. It's a take on our veggie-INA dip mentioned a few weeks ago (The Ina Monologues) and is equally satisfying! It takes about a minute to prepare (well...I actually prepared cocktails while Joe made it..proving it does indeed take less time to make than a martini!) and can be served with vegetables, crackers or our favorite, pretzels.
1/4 cup sun dried tomatoes in oil, drained and chopped (8 tomatoes)
8 ounces cream cheese, room temperature
1/2 cup sour cream
1/2 cup mayonnaise
10 dashes Tabasco sauce
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
2 scallions, thinly sliced (white and green parts)
Puree the tomatoes, cream cheese, sour cream, mayonnaise, Tabasco sauce, salt and pepper in a food processor (slowly beat). Add the scallions and pulse twice. Serve at room temperature.
