GET BAKED THIS HOLIDAY!

Before the thanksgiving feast had time to digest, mobs of nutballs and turkeys flocked to stores around the country to gobble up great deals on holiday items. While some of our guests flew the coop to take advantage of big discounts, I stayed home to write Christmas cards (if you haven't ordered yours yet check out http://www.vistaprint.com/ asap!) and think up cost-saving, creative, gift ideas. One of my favorite things to do with family during the holidays is to get baked! While visiting for Thanksgiving my mother baked my favorite Coffee Cake twice...with a house full of guests, it was nice to have a little something delicious every morning for them to nibble on! As an inexpensive, delicious holiday gift I thought of a creative, fun idea: take my favorite recipe, bake it, jot down the recipe on a card and include the ingredients in individual baggies, place everything in a holiday tin (you can purchase adorable tins at Target for under $5) and without ever leaving the comfort of my nest, I've created a heartfelt, inexpensive, yummy treat!

Sour Cream Coffee cake:
1 cup butter (margarine is OK)
2 cups + 4 tbsp sugar
2 eggs
1 cup sour cream
1/2 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped pecans
1 teaspoon cinnamon
Preaheat oven to 350. Cream butter and 2 cups sugar until light and fluffy. Beat in eggs one at a time. Fold in cream and vanilla. Fold in flour sifted with baking powder and salt. Combine remaining sugar, pecans and cinnamon. Place 1/3 of batter on well greased and floured bundt pan or 9" tube pan (you can find bundt pans in the baking aisle of most grocery stores or at Target). Sprinkle with 3/4 pecan mixture. Spoon in remaining batter and sprinkle remaining pecan mixture on top. Bake 50-55 minutes (stick toothpick in and make sure it doesn't stick). Cool on wire rack and serve.
TIME TO COMPLETE TASK: 20 minute prep time, 50-55 minutes baking
