WANT AND KNEAD


Want to surprise your Superbowl guests with something a little more interesting than Doritos and nacho cheese? Homemade bread is easy to make and will leave you wondering why you included "no more carbs" on your list of resolutions. Trust me, you might think you don't need bread but after trying this you'll want it again and again!
HERE'S WHAT YOU KNEAD:
1.) 3 Cups Flour
2.) 1/4 teaspoon yeast
3.) 1 1/2 teaspoons table salt
4.) 3/4 cup plus 2 tablespoons water at room temp.
5.) 1/4 cup plus 2 tablespoons mild-flavored lager
6.) 1 tablespoon white vinegar
Take a deep breath, sip remaining lager and follow these simple directions. If I can do it..trust me..anyone can!
A.) Stir (don't beat) flour, yeast and salt into large bowl. Add water, beer and vinegar. Fold mixture into ball. Let stand (covered with towel or plastic wrap) at room temperature for 16-18 hours.
B.) Sprinkle flour on cutting board, take ball out of bowl and knead 15x's. Place ball on floured towel and place back in bowl for 2 hours.
C.) Heat dutch oven in oven at 500 degrees (approx. 15 minutes). Lightly flour top of dough and carefully remove lid from pot and place dough in center of dutch oven.
D.) Reduce temperature to 425 and bake covered for 30 minutes. Remove lid and continue to bake until loaf is deep brown. Let bread cool. Serve. Enjoy. Run around the block tomorrow.
TIME TO COMPLETE PROJECT: 18-20 hours (don't panic..you can sleep through most of it)
